Microwave mocha self-saucing puddings
This simple serving idea adds a sweet finish to a weeknight meal.

ingredients

3/4 cup self-raising flour, sifted
1 tablespoon cocoa powder, sifted
1 teaspoon instant espresso coffee powder
1/2 cup caster sugar
60g butter, melted
1/2 cup milk
Double cream, to serve

sauce

2 teaspoons cornflour
1 tablespoon cocoa powder, sifted
1 teaspoon instant espresso coffee powder
1/4 cup brown sugar
3/4 cup boiling water

ingredients

  1. Combine flour, cocoa powder, espresso powder, caster sugar, butter, and milk in a bowl. Stir until smooth. Spoon into four 1 1/4 cup-capacity heatproof, microwave-safe dishes.
  2. Make sauce: Combine cornflour, cocoa powder, espresso powder, brown sugar, and boiling water in a heatproof jug. Stir until smooth. Gently pour sauce evenly over batter in each dish.
  3. Place dishes on microwave turntable. Microwave on MEDIUM-HIGH (75%) for 5 minutes or until tops are firm to touch. Stand for 1 minute. Dollop with cream. Serve.
