1 tbs tartaric acid
2 tsp citric acid
2 tsp epsom salt
1 1/2 kg sugar
1 1/2 L boiling water
- Grate rind of oranges and lemons.
- Juice fruit and mix with grated rinds.
- Stir in tartaric and citric acids, epsom salts and sugar.
- Pour over boiling water and stir until sugar dissolves.
- Bottle and seal for use as a cordial base.
For a tropical cordial, one passionfruit pulp can be added to each bottle.
