These simple and delicious Corn Fritters come together so quickly and taste great. Slightly sweet and so more-ish. Easy to make with the kids.
1/3 cup self raising flour
1/2 cup grated cheddar cheese
1/3 cup creamed corn
1/3 cup cooked sweet corn kernels (see note)
2 spring onions chopped finely
1 tbsp finely chopped chives
salt and pepper
1 tbsp olive oil
- In a large bowl whisk together the flour and eggs until smooth
- Add in the remaining ingredients and mix well to combine
- Heat a frypan over medium to low heat
- In batches, cook spoonfuls of the batter for two to three minutes a side or until golden brown
- Cool slightly then serve
I quickly cook corn on the cob for this recipe by boiling a prepared cob for two-three minutes. I then cool under running water and slice off the kernels.
